Brif introduction:Pineapple proteinase is also known as pineapple enzyme. Mercapto protease extracted from pineapple juice and skin. Pale yellow amorphous powder with a slight odor. Molecular weight 33000. The optimum pH value for casein, hemoglobin and BAEE is 6~8, and gelatin is pH 5. Enzyme activity was inhibited by heavy metals. Slightly soluble in water, insoluble in ethanol, acetone, chloroform and ethyl ether. It preferentially hydrolyzes the peptide chains on the carboxyl side of alkaline amino acids (such as arginine) or aromatic amino acids (such as phenylalanine and tyrosine), selectively hydrolyzes fibrin and decomposes muscle fibers, but has little effect on fibrinogen.
Function of Bromelain:It can be used for beer clarification, medicinal digestion, anti-inflammatory and detumescence.
Storage :Store in a cool and dry place(-20°C ), protected from light, keep drum close when not in use.
