Lysozyme is also called Muramidase or N-acetylmuramide.

By destroying the beta-1,4 glycoside bond between N-acetyl-muric acid and N-acetyl-glucosamine in cell wall, the insoluble mucopolysaccharide in cell wall is decomposed into soluble glycopeptide, which leads to the breakdown of cell wall and the release of the content of bacterial dissolution. Lysozyme can also bind directly with negatively charged viral proteins and form double salts with DNA, RNA and Deputy proteins to inactivate the virus. Therefore, the enzyme has antibacterial, anti-inflammatory and antiviral effects.

Lysozyme is a non-toxic, non-side-effect protein, and has a certain lysis effect, so it can be used as a natural food preservative.
